Default Sometime you get lucky!

Was supposed to have smoked turkey yesterday but my wife had a burger
craving. At the local supermarket they had 7 bone shoulder roasts on
sale for $1.99. I picked what looked like a good one, brought it home
and started wacking it into grinder-sized chucks. Wow! Stuff looked
like Kobe beef!
Killer burger!

Bubba, who is now smoking turkey....152 degrees and rising!

So, just one... you didn't buy a half dozen? Grind one for meat loaf,
grind another for more burgers, a couple for grillin'... 7 bone roast
is excellent grilled, marinated or not. Save the bones for stock.

Bubba,

Thanks for the FYI. Never heard of that cut until now. Does your
supermarket have a name? Acme?!! I've been grinding up rib-eye roast
which is very good but way too expensive.

I'll give it a try. Looks like good meat/fat ratio for burgers.

Publix....I think they're pretty much confined to Fl, Ga. and maybe
Ala. I've found, though, that any of the shoulder works well for ground
meat. Hard to beat the humble "chuck" roast!

FWIW. I've also had pretty good luck with brisket....in fact, sometimes
find myself trimming fat.

Bubba,

I remember Publix from Boynton Beach, FL. Same as the rest.

When I buy chuck roast, it's usually for pot roast with mashed potatoes.
Leftover roast becomes shredded bbq beef on buns with Hunt's Hickory and
brown sugar BBQ sauce for breakfast the following AM.

Bubba,

Never had grits. When I was in FL and discovered bisquits and country
gravy, that settled breakfast decision making. Someday!

Another never had, "hang my head in shame" food is crawfish, just never
was in any family recipe boxes.

Did get my intro to shrimp/chicken/sausage jambalaya at Mardi Gras, 1993.
Best thing since beer! Took my wife and a girlfriend (of hers). They tell
me I had a great time.

I've often thought that the folks that began the "redeye revolution"
probably didn't have much money, and coffee was a scarce commodity in
most parts of the South. It's hard to imagine they would wouldn't drink
it "till the last drop". I've had it many ways and if it's made with
weak coffee I don't mind, but I really prefer it just made with
water....Unless, of course, you've got some good "pot likker" around!!!

My family always made it with hot water, although I've heard many talk
about using coffee. The drippings from frying the country ham is what
really flavors and colors the gravy.

How do you grill a tougher cut of meat like this? Just like a tender cut?

Safeway had a buy 1 get 1 free special on these last weekend at $3.99/lb. I
put four in the freezer. I'm in Apache Junction, AZ, kinda of a long road
trip for you.
