I don't know what this dish actually is called. Chicken Parmesan? Chicken
Parmagiana? Kilikini suggested it to me for cooking in one of those extended stay hotels with a "full" kitchen. Okay, 2 burners, no oven except the microwave kind, a skillet with a lid and a saucepan with a lid. But it turned out great and it's nice to be able to do a little cooking in the room rather than spend $40+ to eat the same thing in a restaurant. Chicken Parmesan 2 boneless, skinless chicken breast halves fresh lump Mozzarella, cut off about 4 good slices 1/2 c. freshly grated Parmesan cheese seasoned breadcrumbs 2 cloves garlic, sliced 1/4 to 1/2 cup olive oil (as needed) 1 small jar of plain spaghetti sauce Mrs. Dash Seasoning (the table blend) Cut a pocket in each chicken breast half and stuff a couple of slices of the fresh Mozzarella inside. Coat the chicken with seasoned breadcrumbs and let sit on a plate for a couple of minutes to allow the coating to adhere. Meanwhile, heat olive oil in a skillet. Brown the chicken very well on each side. Top with a couple more slices of the Mozarella and then pour spaghetti sauce around the chicken in the pan. Add the garlic to the sauce. Top the chicken further with grated Parmesan (pile it on). Sprinkle Mrs. Dash on top. Cover and simmer about 10-15 minutes to finish the chicken. Serve over angel-hair pasta with a crispy bread and a salad or vegetable. Serves 2.
