Making Cachapas - Venezuelan Corn pancakes
 
I am looking for some help making cachapas(Venezuelan corn pancakes).
All of the recipes are basically the same however I am having trouble
frying them.
They tend to burn and fall apart in the frying pan, if I use lower heat
they don't cook evenly and take forever.

Help..

I make crèpes from oat and buckwheat flours mixed 50-50. At low
temperatures (using my carbon steel crèpe pan) they cook unevenly and
at thenormal temp they break up. I have found that raising the
temperature slightly above what I would consider normal gets better
results and they cook properly.

So, you might try raising the temp a bit rather than lowering it.

Also, use a bit more liquid than you might normally as there will be
more evaporation. You want it to have time to cook before it starts
to crisp the surface touching the pan.
