I am looking for some help making cachapas(Venezuelan corn pancakes).
All of the recipes are basically the same however I am having trouble frying them. They tend to burn and fall apart in the frying pan, if I use lower heat they don't cook evenly and take forever. Help.. |

I make crèpes from oat and buckwheat flours mixed 50-50. At low temperatures (using my carbon steel crèpe pan) they cook unevenly and at thenormal temp they break up. I have found that raising the temperature slightly above what I would consider normal gets better results and they cook properly. So, you might try raising the temp a bit rather than lowering it. Also, use a bit more liquid than you might normally as there will be more evaporation.
