A thin, tender cut of meat. Cutlets are best when quickly cooked, such as sautéed or grilled. 2. A mixture of finely chopped meat, fish or poultry that's bound with a sauce or egg mixture and formed into the shape of a cutlet. This type of formed cutlet is often dipped into beaten egg and then into bread crumbs before being fried. © Copyright Barron's Educational Services, Inc. 1995 based on THE FOOD LOVER'S COMPANION, 2nd edition, by Sharon Tyler Herbst. ---= BOYCOTT FRANCE (belgium) GERMANY--SPAIN =--- ---= Move UNITED NATIONS To Paris =--- ********* "Life would be devoid of all meaning were it without tribulation." I use a teaspoon of white vinegar in a cup of soy sauce with some herbs and spices. Works well. |

Do not overcook chicken, especially breast meat. It dries out and is tough.
Cook just till the juices run clear and remove from the heat source. I even remove slightly before the juice is clear and let it finish for 5 to 7 minutes. > wrote in message ... > ilaboo > wrote: > > any ideas on how to tenderize chicken cutlets is appreciated--any info > > about equiptment ( for home use) is also appreciated > > Just marinate the chicken in something slightly acidic for a > few hours, or over night.
