Carrot is, in general, a good keeper. I haven't tried the "dry vs. wet"
storage. Since I'm often using it in Asian application, I generally
sprinkle it with a bit of mirin (which is a mild alcohol, sugar, salt
solution) and it stays for days.

Did you buy this already grated? If not, simply don't grate so much.
Carrots, being a root vegetable, generally keep for several weeks in a cool,
dry drawer in the fridge. For the grated carrot, I would think a cold water
"bath" would help but since I don't keep grated carrot on hand I'm certainly
no expert.

Once peeled, carrots lose much of their nutritional value in short
order, grating only accelerates the process and if soaking in water may
as well eat sawdust, unless you drink the water.... okay, grated carrot
soup. Only way I can think to store grated raw carrot is to wrap well
and freeze, but then th etexture suffers... but as Jill says, why would
anyone want to pre-grate carrots, simply grate as needed. Grated
carrot shouldn't even be peeled, much of its nutrition is in its skin,
just scrub well. Can't take more than 30 seconds to grate a carrot.

Or carrot juice!

I remember years ago a friend and I were helping my brother Scott get ready
for a party. He was doing a veggie platter and was going to peel the
carrots before cutting them into sticks. We asked why on earth would you do
that? Uh... he didn't know. (Something about asthetics, I think.) Well,
you're going to peel away the nutrients so don't do it! With two women
squawking at him not to peel the carrots, I don't think he's peeled one
since

No. I'm talking about taking a fresh carrot and grating it ahead of time. I
work fulltime. I'm not a morning person and with getting a three year old
off to childcare and then myself off to work until 5.30 most nights I need
to streamline things as much as possible. That means cooking in bulk and
preparing what I can ahead of time. Have just been wondering about how well
carrot will store.
Had a few strange responses to what I thought was a pretty straightforward
question though.

Most people, unless retired, work full time and a lot of people have young
children. Grating a carrot only takes a minute, at the most, unless you
need a LOT of grated carrots (for what, I can't imagine).
I don't think the responses you got were odd.

You say you cook in bulk because of this, so I have a suggestion. Cook a
LOT on weekends and freeze leftovers in serving size portions for dinner,
individual portions to heat for lunches at the office, etc.

I understand what you are saying but in the mornings if I am making a quick
salad roll it would be so much easier if I could cut out a step or two
involving the grated carrot. I already do this for the cheese. It would also
mean the carrot would be there ready when I'm throwing together the salad,
as well as cooking the mains, for dinner. I want to increase our veg intake
as sometimes we are not having enough due to the time and energy restraints.

I guess I'll just have to experiment myself.

The nutrients are concentrated closest to the skin, but so are the
toxins, so peeling is a wash; I say do it if you want, don't if you
don't.

Yeah, but... there are far more nutrients relative to toxins under the
skin of carrots... you'd need to eat an awful lot of raw carrots before
the toxins over take the nutrients, you'd turn lurid yellow first
(carotene poisoning). Anyway, most of the toxins are at the top crown
of the carrot where the leaf stems join... it's always a good idea to
trim away that top 1/2" or so where the core is green, that portion is
bitter anyway. I recommend lightly scrapping carrots, use the back of
a paring knife... rinse briefly, do not soak. Most folks use veggie
peelers, they pare away about 15% of their carrots by weight and 50% of
their nutrition.
