Default And Here They All Come - Zucchini

I planted 3 zucchini this year, one in the greenhouse from which we've
been harvesting for about a month now, and two outside. Well, those
outside plants have gone and done it! There are 3 large zucchini that
somehow missed my inspection as I like to harvest them when about 6 to 8
in long and one smaller one about 6 in. So I guess I'll have to make a
batch of zucchini bread as soon as this heat spell breaks. Here's one
of our favourite ways to eat zucchini besides grilled - Slice or chop a
spanish onion. Cut zucchini into bite size pieces. Sautee in olive oil
with a little butter* until onions are lightly carmelized. Remove from
heat. Sprinkle with fresh ground pepper, salt, and fresh grated
parmesan. Another way we like it is a foil pack cooked on the grill -
Cut zucchini into bite size pieces. Add desired amount of chopped onion
and a handful or more of baby carrots (or carrot coins). Toss
vegetables with olive oil and spread evenly onto tin foil. Add a pat or
two of butter* if desired along with fresh chopped herbs (chives,
parsley, or rosemary), salt or pepper as desired. Fold foil into packet
then pop onto the grill. Easiest way we like zucchini is to cut in
half, lightly brush with olive oil and grill cut side down.

* I use just enough to give the extra flavour.

BTW, my neighbour said he loves zucchini so he might be in for a big
surprise

Just want to give a nod to a clever poster about 2 or 3 years ago--I
always think of him during zucchini season, and chuckle. Said he:
"Around here, you have to always lock your car, or you will come back
and your back seat has been filled with zucchini."

Do you ever "stuff" zucchini? There are many variations... including
just putting whatever suitable item you like/have in the
refrigerator/larder. I'm not a big fan of meat fillings, so I use
breadcrumbs (egg to bind), spinach and cheese - but not in that order.

I *remember* that one... it was hilarious!!!! I wish I lived next to
one or two zucchini growers.

Yes--I like to scoop out some of the center part (seedy) of the
zucchini, after slicing it in half, lengthwise. I mix up cottage
cheese, egg, parmesan, and a shake or two of tabasco. Heat in
oven--not too long.
I like your idea of spinach and breadcrumbs.

Have you seen the Alton Brown zucchini episode where the neighbor brings him
basket after basket of zucchini?

They're not kidding either. Afew years ago, I was leaving for work
and someone left 2 giant paper grocery bags full of the little suckers
in front of the door. We never found out who did it.
