Default Tomatoes, feta cheese and caper recipe

Tried a simple recipe that a coworker told me about--for tomatoes--and
it doesn't require any baking.

Slice some tomatoes--single layer on plate
Sprinkle olive oil, salt, pepper, and your choice of herb over tomatoes
(I use either dried Italian Seasoning, or dried Mexican Seasoning)

Sprinkle with capers, feta crumbled cheese, and grated parmesan.

That's it--good way to use up the bumper crop.--becky

Another tasty alternative which bears some similarity, is to slice a
large fresh tomato on a plate, sprinkle with salt-pepper, a couple of
cloves of finely chopped garlic, a dash of oregano, and even a bit of
fresh basil, and top with good olive oil. Makes a nice summer salad,
and is great for also dunking some good Italian bread in! A fav of
mine, Mark

I had something similar tonight for dinner. Didn't feel like cooking. Cut
thick slices of beefsteak tomato, head lettuce, sweet onion, and cucumber.
Dressed with a drizzle of EVOO infused with garlic, a chiffonade of fresh
basil, a bit of crumbled bleu cheese, and cracked black pepper. It was so
refreshing, I had seconds.
