Default Fresh purple peppers

I just bought some fantastic, aromatic purple peppers at the farmer's
market. I"m looking for ideas for a good way to consume them tonight.
Either as a side, part of a side, or entree, cooked or not. Please let me
know.

Siobhan,
Don't cook em - they'll just turn green.
Otherwise use em like any other bell pepper - the only difference is
the color; and they're not as sweet as red, yellow or orange. Have you
seen white peppers?
