I am reading a book "George Orwell In Burma", and the author hangs out in
tea rooms in Burma. She talks about the honey like tea. It appears to be made with condensed milk or sweetened milk. How would you make this kind of tea. I ehecked on MSN search but came up with only cafes. Thanks Tom |

First you make the blend: Combine Darjeeling tea, cardamom, cloves, stick cinnamon, star anise, and split vanilla beans. (I think you'll probably have to experiment to find out what proportions fit your tastes.) Brew and strain the tea/spice mixture, then add sweetened condensed milk. Voila! Burmese tea. (If you were trying to make Thai iced tea, you'd start off with the same tea mixture, but you BOIL the tea -- a no-no by most tea-brewing rules -- for about half an hour. Then you add lots of sugar and chill. Pour into a glass over ice but leave lots of room at the top, because you top the drink off with a generous layer of half-and-half.) Bob |
