It is different and yummy and I've never heard of it before. So perhaps I invented it. Google has zero webhits on "eggs with preserved lemon", and no previous group hits. I used perhaps a tablespoon and a half of diced preserved lemon, mixing it into two eggs before adding them to the pan, in which the onion and zuchini were already sauteeing in olive oil. Steve |
