A quick report on the birthday breakfast which was a great success.
The tropical fruit platter was a treat followed by the baked dish called 'Xmas morning Wifesaver'. OJ and champagne toasted the 3 birthdays. This sort of dish is unusual in Australia and was a hit. I prepared it the night before - basically slices of bread in an oven proof glass dish and layered with slices of proscuitto (recipe specified thin smoked bacon I think) then tasty cheese slices, another bread layer. Pour over a mix of beaten eggs, seasonings, worc. sauce, minced onion, green bell pepper, tabasco, milk, little cream. Leave in fridge overnight then bake for 1 hr. I was impressed that it had such low fat content (no greasing dish even). It was soooo delicious! Will certainly keep this recipe in my book for guests staying over. We actually put it in the oven on automatic and went for a walk down the beach whilst it was cooking! Cheers Bronwyn |

Considering the amount of forethought and planning you've given the day, I'm sure the remainder will be just as successful. No, didn't make the bread this time. (It took the best part of Friday
to do all the cooking mentioned previously. )But the planning paid off as the weekend was relaxing for me. Bought the fresh tiger prawns on Sat. morning and just assembled the sandwiches before we ate. Delicious too. I'll post the recipe below for the Indian Yoghurt, banana and coconut cake as that was sensational too. Pandora, for the breakfast dish, just do a search on this group for 'Christmas wife saver' and it will come up. INDIAN YOGURT BANANA CAKE Ingredients: 80g desiccated coconut, toasted 125g ghee or clarified butter or unsalted butter 150g caster sugar 40g brown sugar 2 large eggs 3 medium large bananas, very ripe 200g thick plain yoghurt 250g self raising flour (cake flour) 1 teaspoon ground cinnamon 1/2 teaspoon mixed spice 200g sour cream or creme fraiche 100g icing sugar (powdered sugar) 50g toasted shredded coconut # Preheat your oven to 190=BAC. Remove the base from a 22-24cm non-stick springform tin and place a piece of baking paper (such as 'Glad Bake') over the top. Replace the sides of the tin, causing the paper to form a false base. Grease the tin and pour in the toasted desiccated coconut. Tip the tin all around to coat the greased sides with the coconut, then pour out the excess and reserve for the cake batter. # Beat the ghee and sugars in a bowl until creamy, then add the eggs, one at a time, beating well after each addition. Meanwhile, mash the bananas. # Remove the bowl from the mixer, then add the mashed bananas, yoghurt, flour, cinnamon, spice and remaining coconut and stir thoroughly with a wooden spoon until all ingredients are well combined and no floury areas remain. # Spoon the mixture into the prepared tin and gently smooth the top. # Bake at 190=BAC for 55 minutes, or until firm and 'springy' when depressed in the centre of the cake. # Remove from the oven, allow to cool for 15 minutes, then remove the sides of the tin and cool completely. # When cool, remove the base and baking paper and place the cake on a platter. # To make the icing, mix together the sour cream and icing sugar until thick and spreadable, then spread over the top of the cool cake. Pour the shredded coconut over the cream, until thickly covered. Note from Bronwyn - I cooked the cake in a large springform ring tin and didn't line the base (because it was rounded) with paper. It worked out just fine, I just greased it with butter and shook the coconut around it. It came out of the tin easily. Sorry the recipe is only in metric. Holler if you need more translation. |
