Another "it's been years purchase."
Bought a J.A. Henckel 7" Santoku knife at Target on sale for $7.68. It's stamped "Fine Edge Pro" German stainless steel 31427-180 (7") Made in China. I like the shape of the blade for slicing and dicing. It feels good in my hand but maybe a little light. It's one-piece stamped stainless with triple rivet polypropolene handle. You're probably saying "Cheap thrills, Andy!" Maybe, but I've never minced an onion finer in my life. Just hope it holds an edge longer than my oldies. Andy |

I paid $80 for my Wusthof Classic earlier this summer and I think it's a bit light too. I coulda saved $70+. :/ |

I got these two knives for $10 total. http://www2.jcpenney.com/jcp/Product...alog_item.y=10 which shows $76.99 now I have a complete set of Wusthof knives which I bought in Europe 30+ years ago and they are still going strong, but no Wusthof santoku knife, so I bought this 2-knife deal. I use the small knife, but the santoku is a little large for my hands. I prefer two or three other vegetable knives I have instead. My husband will use the santoku, but prefers our other older vegetable knives. Dee Dee |

Good find. I'm sure it will work as well as the Made in Germany version.
Target also has a set of 6 or 7 all stainless steel Henckels on clearance for $40. Made in Japan. These have handles that are stainless steel too. I guess this style wasn't so popular. Maybe it's like a radical software upgrade: after you get to know it, you will love it... but I'm not there yet. sf <$80 lighter and still not feeling like the money was well spent> |

But after using my broken down carbon steel knife for years and years, there is nothing like carbon steel (not stainless carbon). I wish my original set 30 years ago of Wusthof had been carbon. Actually carbon steel knives *take* an incredible edge, but they don't "hold" an edge well, gotta steel often. Sheldon |
