Big grocery shopping is tomorrow so today was Pantry day. Had a mess of
leftover Sirloin Roast I cooked in the crock pot yesterday so I decided on my beef enchiladas for dinner. They turned out fabulous. Also made more apple crisp. This time I added a bit of powdered ginger because I ran out of cinnamon. Only had half what the recipe called for. it came out quite tasty. Enchilada Recipe 1 pkg Corn tortillas (12 in a pkg) 1 28oz can (or 2 15 oz) Enchilada sauce 1 4oz can Chopped Green Chilies 4-6 oz Cream Cheese - Softened 6 green onions chopped 1 8oz Pkg Sharp Cheddar Cheese divided in half - half for filling , half for topping 2-3 Cups Shredded Beef (I have also used shredded chicken breast or pork at various times) it was closer to 3 cups, I didn't measure. 1 tablespoon chopped garlic about 2 tablespoons hot sauce a good sprinkle of Cumin, Chili Powder and a good pinch of dried basil and oregano. mix everything except the enchilada sauce and tortillas in a large bowl until everything is combined. I usually add 2-3 tablespoons of the enchilada sauce to the mix. in a 9x13 pan, place about 1/3 of the sauce. Cover the tortillas with a damp paper towel and nuke for 1 minute. In a shallow bowl pour about 1/3 of the sauce. Dip each tortilla in the sauce on both sides. (I keep the stack of tortillas nestled in the hot paper towels and after dipping, I put the torilla on the top of the stack for ease in filling/rolling) Fill with about 2 heaping tablespoons of the meat mixture and roll. place into the 9x13 pan. Repeat until all 12 are nicely nestled in the pan. Spread the last 1/3 of sauce on top and any leftover from the dipping bowl. top with half the cheddar cheese. Bake covered with foil 375 for 25-30 minutes. Served topped with sour cream and more chopped scallions and red rice on the side. Note: I know the cream cheese sounds weird, but I had enchiladas at a neighborhood block party that were awersome. I asked the neighbor her secret. the answer - Cream Cheese. it gives the filling a smooth velvety consistancy. Also I have added other things in the past to the filling including black olives, corn, Chopped fresh seeded tomato and chihuahua cheese. As always, You can play with the spices to YOUR taste. Experiment, thats what cooking is all about. |
