I recently bought a bag of small red potatoes and now I need some meal
ideas. I was initially just going to cook them and mix with parsley, but I've changed my mind. Can someone offer some suggestions on what I can add to them, in a crockpot, to make a meal, something simple yet good (meat, maybe some onions and mushrooms)? Also, how long do you think it would take for the potatoes to get done in the crockpot? Should I half the potatoes to speed up the cooking time? I trust your opinion as you are the seasoned cooks. I'm just Mark Ferrante Bachelor Cook Thanks! |

Had some left over red potatoes from making potato salad over the weekend. Cubed potatoes and boiled until just beginning to soften. As potatoes boiled, put some olive oil and butter in a frying pan at low heat, gently cooked a couple of cloves of garlic and some red onion in the mix. Keep heat low enough to not discolor garlic. Added potatoes, upped the heat and added salt, pepper and fresh chopped dill. Cook until potatoes get a nice crust. Put 'em on a plate in a warm oven. Chopped up some left over smoked pork shoulder. Sauteed in the same pan as the potatoes, added 3 scrambled eggs, made a small omelette. Added potatoes, sour cream and cheese to the omelette, melt cheese and enjoy. Took all of about 20 minutes to prep and cook. If you're planning to do an all day cook in the crockpot, I'd leave the potatoes whole Jason |

I'm just Its not a crock pot recipe, but one of my favorite ways to cook those red potatoes is to wash them, then quarter them, then fry them with a little olive oil and canola oil and sprinkle the pototoes with paprika, pepper, and garlic powder. They go well with lots of main dishes. |

Try cutting them in cubes after they have cooked for abou 15 minutes and add them to a skillet with sliced smoked sausage, cut up onions, and peppers. Add about 1/4 cup water or white wine and cover the skillet, stirring occasionally until potatoes and peppers are tender. Serve with a salad and crusty bread. You'll have a lot left over, but it reheats very well. gloria p |

Pick from 28,000 hits Yes, I could have done that, but I thought I would ask here because I love this group and help keep it active. I will say, however, that your recipe below sounds really good, as do the other responses! Thanks everyone, so much!
