We had one of our wonderful "maintenance" power cuts this weekend. No
power for 4 hours yesterday and nothing for 9 hours today... Anyway, we still ate well today... pulled out the gas cooker and the charcoal for the braai (grill/BBQ whatever you wanna call it). We had Tiger prawns (shrimp) with fried rice.... Took the prawns, tore of the heads, cleaned and deveined them (but left the tail shells on). Poured some EVOO and minced garlic over them, whooshed that around and let them soak in that mixture for an hour or two. We then lit the charcoal and waited for it to get to the right temperature... While we were waiting, we put the prawns on wooden skewers, about 4 prawns to a skewer. I made some plain boiled rice, and put it aside. Then I chopped up a medium-sized onion, and a large-ish green pepper which I sautéed in a pan on the gas cooker with 3 or 4 chopped sun-dried tomatoes (and a bit of minced garlic). When this was done I added the cooked rice and stir-fried the lot together. While I was doing the rice DH grilled the prawns on the charcoal fire for about 8-10 mins per side.... It takes a little bit of "effort" to remove the shells from the prawns before eating, but it was worth it! YUM ![]() -- Cheers Cathy(xyz) |
