Default Why So Tough?

Lately I've been trying various pancake recipes rather than buying cake mix,
expecting better pancakes. None of them turned out like the nice golden brown
pancakes I used to
get when I was growing up and there were pancake breakfasts at the church we
attended at the time. Nor are the home made pancakes even remotely golden and
tender as even a Denny's pancake or a I-Hop pancake despite
the so-called recipe that's around.

Is there some secret or trick to making tender, golden
brown pancakes? Some special skillet or pan?
