Tonight it is fish tacos with some of the mahi-mahi we caught last summer. I

Shredded cabbage, finely sliced cucumbers, carrots, bell pepper and diced jalapeno pepper, marinated in very light vinaigrette. |

Taking an idea from Chinese cooking, fish tastes pretty good with black bean
sauce. Maybe you could make a black bean paste, sort of like the consistency of regular refried beans, and figure out a way to add just a touch of sweetness to them. Maybe a little apple cider vinegar, cooked down by 2/3, then mixed with the bean stuff? What do you consider "standard" additions? I know what we had for our Labor Day "bbq", but I don't know if it was standard or not. |
