Yesterday I roasted a chicken on the bbq. I was home alone so there was
still a fair amount left over for tonight's dinner. Since it was roasted I have a nice rich base for gravy I'm tired from canning so it's nothing fancy but here it is. I wouldn't mind ideas for another veggie. I have lots of beans <rolling eyes> but we are almost beaned out. Not Fancy Chicken - debone chicken & cut into bite size pieces - deglaze pan with chicken broth, add enough chicken broth to make about 2 c gravy - add a splash or two of Worcestershire sauce - add salt & pepper to taste - bring gravy to light boil - thicken with flour slurry - stir in chicken pieces I'm planning on serving this on a bed of mixed wild & brown rices. Two problems - bread/buns/or biscuits and a second veggie preferrably non-starchy and something just a little dressed up but not gourmet. Not to waste anything the chicken carcass is happily cooking away for chicken stock. Depending on the yield I may can it but will more than likely freeze it. Dessert Here's what I'm thinking - plain yogurt topped with peach slices and a sprinkling of fresh grated nutmeg BTW, I have a love/hate thing with this time of year. I'm so tired from daily canning sessions, I don't feel like cooking for dinner yet I get great pleasure out of seeing my canning stash grow. I need quick easy to prep meals. |
