I find a microplane zester work very well for grating ginger - it
grates into smaller bits than a normal grater, which is good for
something as fibrous as ginger. Of course, it is also fabulous for
grating nutmeg.

Sometimes I'll slice my ginger root and toss it into my small food
chopper with some of the liquid from the recipe. It gets it pretty fine
if I do it right. :-)
