Default Blueberry ideas

Got any blueberry recipes folks?

Here's a Lemon Blueberry Pancakes recipe to start this thread.


Lemon Blueberry Pancakes

1 egg
1 cup flour
3/4 cup milk
1 tablespoon sugar
2 tablespoons butter
1/2 tablespoon baking powder
1/2 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons grated lemon rind
1 teaspoon lemon juice
1/2 cup fresh or frozen (thawed) blueberries


Mix milk and lemon and let set for 5 minutes.
Mix dry ingredients together.
Beat egg until fluffy, then pour in milk lemon mixture.
Combine all ingredients except blueberries.
Don't overmix leave batter a little lumpy.
Stir in blueberries.
Heat skillet for 2 minutes.
Pour batter in skillet and turn over when bubbles appear, approx 2 minutes.

Winter Blueberry Jam

Makes about 5 half-pints. Quick and easy to make.

You'll need sterilized half-pint canning jars with bands and a box of new lids.
Sterilize jars while cooking jelly.

Ingredients:

6 cups (approximately 3 pounds) crushed blueberries.

4 1/2 cups sugar

*Wash blueberries before crushing. In 8-quart saucepan combine blueberries and
sugar. Bring to a boil while stirring and continue cooking until "jelly stage"
(approx. 15-20 minutes of constant stirring). Imminently fill hot jars with
mixture leaving 1/4-inch headspace. Place lids and bands on jars and process in
canner for 5 minutes. A delicious holiday jam.

BlueBerry Tart

none

3/4 cup pecan peices
3/4 cup Sugar
3 tbsp all purpose flour
1 lb frozen unsweetened blueberries; wild variety prefered
1 9 inch frozen/fresh pie shell
1 cup sour cream

preheat oven to 400F

Place pecans, sugar, flour in the bowl of a food processor and process till
powdered. Combine in a bowl the powder with the frozen blueberries (mix
well).
Pour into pie Crust.

Place tart on a foil lined cookie sheet (prevents spilly clean ups). Bake
for 50-60 minutes, until the pie crust is lightly browned on top.
Cool for at least 1 hour.

To serve cut into wedges and garnish with sour cream.

Blueberry Buckle

Topping
1/4 cup butter, room temperature
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon

Cream 1/4 cup butter with 3/4 cup sugar; add egg and beat well. Into a
medium bowl sift together 2 cups flour, baking powder, and salt. Add sifted
dry ingredients to butter mixture alternately with 1/2 cup milk, beating
until smooth. Fold in blueberries. Pour into a greased 9-inch square baking
pan. For topping, combine blend together ingredients.
Sprinkle topping crumbs over batter. Bake at 375° for 35 minutes.

just made the blueberry struesel in the new penzey's catalog...I'll know in
about 45 minutes how it turned out....I used 2 tablespoons of water, instead
of milk, as I don't have any milk....I also just called penzeys to tell them
that the directions left out the part on when to put the blueberries in the
mix.....I added them midway, on top of the first layer of batter, with the
struesel topping, then put the rest of the batter on top.

Harriet & critters

the lady manx who is also sleeping, in the chair by the window.
