Default Dreaming Up Disaster.

Woke up this morning and on a.m. fridge inspection I had about a pound
of cooked roast beef leftovers.

Ran it through the meat grinder and prepared taco fixings.

When it was all ready to eat, the look of cold, wormy, ground cooked
roast beef grossed me out.

I forced one taco down and then had to stop. I was just tired of roast
beef sammiches! Maybe next I'll hide some in an omelette. Probably not.

Try this next time instead of sandwiches. With sincerest apologies
to Dimitri, this is 15 Minute Stroganoff. Makes good leftovers, you'll
probably want to add a little bit of sour cream to it after you heat it.

This is from a Better Homes and Gardens cookbook. I changed a few
things for my taste. Also, I don't measure.
12 ounces chuck roast cut into strips (or whatever steak you have/like)
Cooking oil
Package sliced mushrooms
3/4 cup water
Envelope of onion soup mix*
2 tablespoons flour
8 ounce carton of sour cream

Hot cooked medium egg noodles


Brown the meat in the hot oil.** Remove the meat and put in the
mushrooms. Saute the mushrooms until tender.


Add the meat back to the skillet, along with the soup and the water.
Heat to boiling. Mix the sour cream and the flour in a bowl. Stir
into the skillet. Cook until the mixture is hot and bubbly. Cook
and stir one minute more. Serve over noodles.

*make your own and save the salt and chemically taste ... use
salt-free Redi-Base beef base, garlic powder, Penzey's toasted
dehydrated onions, and maybe celery seed.

**since the meat was already cooked, just heat it through

Coulda ran it through the grinder three times with onion n' parsley...
blend with mayo, pickle relish, and hot sauce... deviled beef pate
sammiches.

I had a relative who used to grind up the last of the leftover roast
beef, mix with eggs, chili sauce, onions and leftover mashed potatoes
if available, shape into flat patties and saute in butter. It was a
nice change.

semi-OT here but can anyone offer any tips/techniques to thinly slice
cold roast-beef without an electric slicer? The knife always seems to
work it's way inward making the slice thin on top and expanding to a
big hunk by the time I reach the bottom bottom.

I actually have one of these things stashed somewhere, but it's hand
operated with a crank, not electric. ;-)

Personally, I can get paper thin slices of just about anything,
including tomatoes, with my chinese cleaver knife...

Slice it up into strips, stir fry with some chinese black bean and
garlic sauce, your favorite veggies, and server over rice.

Of course now that it is ground already, perhaps a roast beef hash is
still possible.
