Default Dinner Tonight

I needed something easy and filling for dinner tonight, so
we're having Dimitri's creamed tuna over English muffins:

Creamed Tuna on Toast

2 tbsp. butter
4 tbsp. flour
1/8 tsp. salt
1/8 tsp. pepper
1 ½ c. milk
1 can tuna in oil, not drained
¼ C. onion, sautéd (optional)

Heat butter in saucepan over low heat until melted. Stir in flour,
salt, and pepper. Mix with fork. Cook over low heat, add milk,
stirring constantly until mixture is smooth and bubbly. Add tuna.
Toast 6 slices of bread and butter. Place on plate and pour tuna
mixture over toast. Serve with salad and vegetables.

Variations:

* Serve over crescent rolls or English muffins
* Broil cheddar slices on English muffins, then cover with tuna
