Okay, he's 81 and isn't much into cooking these days. When we talked today
he told me about a soup he made - not his classic navy bean soup, but he was just as proud of it! Mom bought a ham steak, about 1/2 inch thick. Not salty country ham. He diced that and diced an onion and put them in a pot with a can of chicken broth. Heated that up until the onion was tender. Then he added a can of creamed corn and a can of cream of potato soup and a soup-can of milk. Heated that up without boiling it; seasoned with some pepper and said it was right tasty. Me, I'd do it a little differently but then, I'm not 81 years old. I'd saute the onion in some butter with celery (when I mentioned garlic I thought he'd have a stroke - he said he loves garlic but not in this! Okay, relax. No garlic!) I'd chop up some fresh potatoes to simmer with the sauteed veggies in the broth, then add the ham. I'd use half & half (the fat free kind, even) rather than canned potato soup with milk. Still, it sounds like a nice basis for a ham & corn chowder, so thanks Dad! Jill |
