Default Carribean desserts?

Our "gourmet" club meets in a couple of weeks, and we are in charge of
dessert. The theme this month is Carribean.

Any ideas? I'm thinking rum cake.

Hi Mitch, Chef Carol here. I'm a professional chef with over 23 years
experience. I do have a complete Carribbean menu (including a lime

Hi, Carol. Wow..thanks for the link. I wish we were in charge of
appetizer or main course. Your dishes are awesome. I had conch in
Cayman and it was so good.

I printed out the recipes for plantains and Coconut Lime Cake.

We were thinking of mudslides for drinks.
