Default Got truffles!

Awhile ago I had asked about where to find truffles in Philly.

I found them. A tiny jar with three truffles in it with some extra virgin
olive oil.

They are black summer truffles.

I've never had truffles, that I'm aware of.

Now I wonder what to do with them. The salesperson said once I open the
jar, they will continually decay.

I was going to try shaving some on top of cheese and crackers and over
linguini and pesto.

I've queried a lot of recipes but strangely, few call for truffles.

Gonna have to put some on a cheeseburger just because!

Any other dishes? Don't so much need recipes, just dish ideas.

I'd try them in/on something that would not cover up the flavor.
Maybe an omelet or scrambled eggs?

Summer truffles are Tuber aestivum. It's possible you will find other
recipes by doing a Google search for Tuber aestivum recipes.

I'd second the omelet idea first. Also, they can be mashed up in the
olive oil into a paste, which should last for much longer than just the
truffles.

The salesperson is correct in that once the truffles are exposed to
air, they will being degrading. But the portion under oil should remain
fine for at least a week after opening the jar. If the jar doesn't have
enough olive oil to cover the truffles, just add a little more.

Tuber aestivum is one of my favorites. I had it last year at the North
American Truffling Society dinner, when Dr. Jim Trappe brought in a
rissoto with truffles he had purchased in France, I believe. It was
originally identified as Burgundy truffle, but proven to be the same as
T. aestivum. And much better than many other European truffles I've
had!

Om,

I'll try my spinach/tomato/cheese omelette and top it with truffle
slivers. I'll skip the tabasco so I capture the flavor.

I will save the jar's truffle oil for something like a foccacia oil
coating.

Truffles are so precious that you must not waste them to make simple recipes
with simple ingredients such as eggs.
Death of truffle is eggpasta "Tagliolini" with butter and truffle grated
over in very thin slices. Then you can make "Risotto al tartufo" or Albese
meat, a sort of "carpaccio" od raw meat. Only if you have many kilos of
truffles you can take the liberty to cook them in Frittata.

Pandora,

They're precious but for my first dish, as apprehensive as I am, it's not
imperative that I do something exotic, mainly because I'm not an exotic
cook. Rather, I mean I don't cook exotic dishes?? LOL!

Truffles chopped fine in extra virgin olive oil atop cappellini with
just a touch of salt.

I also like making a leek and cream sauce with black truffles to go over
linguine.

One of the most elegant dishes I ever had was so simple -- just shaved
black truffles over bread that had been rubbed with fresh garlic,
brushed with oil and grilled.

A variation on that is to cook them with porcini mushrooms and put that
on grilled bread. They seem to really stand out when they are cooked
with mushrooms.

They are so delicate that the best dishes are the simplest, with as few
flavors as possible to obscure the truffle. Truffles don't stand up well
to acid backgrounds.

(large marble sized) over them and I couldn't taste them!

I was under the impression they were very pungent/aromatic.

The jar's original seal was unbroken until I opened it.

What's up with that?

I have two left. I hope they're not duds too!

Why? As far as I'm concerned, it is exactly because they are precious
that they ought to be enjoyed mostly for the own sake. Eggs are a
perfect vehicle, no different from simple pasta in this regard. Like
pasta, they provide a nice, neutral background to underline the flavour
and aroma of truffles. The very best truffle dish I have ever had was
"oeuf mollet aux truffes", a soft-boiled, shelled egg with truffles, in
the Dordogne (Périgord-Quercy) region of France. To me, it opened up
the "essence" of truffles.

I've read that truffles lose their flavour and aroma rapidly, and that
packaged ones have much less flavour than fresh ones.

But I'm not an expert, by any means.

Well, scrambled eggs and truffle were a big disappointment.

Truffle two, last night was shredded over d'affinois cheese on toasted
french bagette coins. Same disappointment.

Truffle three this morning was shredded over remaining french bagette
coins after french toasting in egg batter, topped with cream cheese.
Total disappointment.

I need to travel to where they hunt them to know their true flavor
before I spend another $25 for an ounce of tastelessness, dagnabbit!!!

Perhaps I was on to something saying that I thought they were around $1K
per lb. Maybe you need to spend more. I calculate $416 for the ones you
bought.

Yes. But the black winter truffles are priced about 4x more, from what
I've seen offered over the internet.
