Ten weiners and only one cup of rice ? Maybe I'm just used to dealing
with larger weiners ?

Better :

2 Cups of long grain rice
2.5 Cups of chicken stock or broth
1 large green bell pepper
I large onion
3 Stalks of celery with leaves
4 roma tomatoes, chopped and seeded (peeled if it makes you feel
better)
(may sub a can of diced tomatoes in a pinch - cans seem to make Jimmy
happy...)
1 pound of andouille sausages (or one pound of kielbasa in a pinch)
2 pounds of chicken with bones (cut up)
OR 1 pound of boneless chicken
1 bay leaf
1 pinch of salt
3 cloves of garlic minced or pressed
bacon grease or oil
1 tablespoon flour
handful of fresh parsley, chopped

In a large pot or large cast iron pan, brown chicken in bacon grease or
oil. Remove. Add sausage, onion, peppers and celery. Saute until onions
are slightly brown. In a saucepan, add 1 tablespoon of flour and two
tablespoons of oil. Stir over medium heat until it browns. Remove from
heat and add to large pot or pan with chicken, sausage, onions,
peppers, and celery. Add broth or stock. Stir in garlic, bay leaf, and
tomatoes. Cover and cook on medium heat until liquid is absorbed.

Stir in parsley and serve with a bottle of hot sauce.
