Ten weiners and only one cup of rice ? Maybe I'm just used to dealing
with larger weiners ? Better : 2 Cups of long grain rice 2.5 Cups of chicken stock or broth 1 large green bell pepper I large onion 3 Stalks of celery with leaves 4 roma tomatoes, chopped and seeded (peeled if it makes you feel better) (may sub a can of diced tomatoes in a pinch - cans seem to make Jimmy happy...) 1 pound of andouille sausages (or one pound of kielbasa in a pinch) 2 pounds of chicken with bones (cut up) OR 1 pound of boneless chicken 1 bay leaf 1 pinch of salt 3 cloves of garlic minced or pressed bacon grease or oil 1 tablespoon flour handful of fresh parsley, chopped In a large pot or large cast iron pan, brown chicken in bacon grease or oil. Remove. Add sausage, onion, peppers and celery. Saute until onions are slightly brown. In a saucepan, add 1 tablespoon of flour and two tablespoons of oil. Stir over medium heat until it browns. Remove from heat and add to large pot or pan with chicken, sausage, onions, peppers, and celery. Add broth or stock. Stir in garlic, bay leaf, and tomatoes. Cover and cook on medium heat until liquid is absorbed. Stir in parsley and serve with a bottle of hot sauce. Dean G. |

Perhaps if they were cooking in a dormatory room on a hot plate this was their approximation of "homemade" cooked with limited facilities. Or perhaps their parents cooked this way (wouldn't surprise me). I wouldn't eat this. I do, on occasion, use canned soups and dried soup mixes for cooking, but nothing to this extent! Jill |

Or they're just broke -- when I was in college (and very poor), I spent a week eating nothing but cream of wheat (that's all we had in the house). They probably grew up with food like that and didn't care to learn otherwise. |
