I prefer kosher salami, but find that it goes bad after a short time in the
refrigerator. What is the best way to make it last?

All sliced cold cuts spoil rapidly... for long shelf life buy whole
salami... whole kosher salami should last like 3-4 months in the
fridge.

Why do you want it to last, is it for your salami collection?

Really? I used to unwrap mine and leave it sit on the shelf to dry
out and harden. MMMMM. Or are you talking aobut deli slices? Those
I buy in 2-3 day quantity, since yes, it does go bad quickly. You can
freeze it, Put a couple of days worth in a packet, wrapped well, and
freeze.
