I make lasagne using a rich homemade meat sauce that includes lean
ground beef, tomatoes, tomato paste, onions, fresh sliced mushrooms, green pepper, celery, fresh garlic, fresh parsley, and spices. Today I did a small lasagne session to make up a few trays for the freezer. The tomatoes and paste were canned a couple of months ago. Cheeses were - motzarella, medium cheddar, extra old cheddar, fresh parmesan, harvarti, & cottage. All cheeses are shredded and blended prior to assembling the lasagne with the exception of the parmesan that is grated as needed and the cottage that is spooned onto the layers as needed. We like spinach in our lasagne too. Isn't it though! The rest of my week is destined to be quite hectic - DS is going into week 3 in the hospital so I have a lot of driving & meetings, checking his apartment, feeding his fish, financial matters, etc - my own medical appointments this week, pre-meeting today, MRI tomorrow & follow-up - dealing with another DS's current problem du jour - DH leaves Sun for his male bonding trip & I promised I'd make a batch of chili for the guys - well you get the idea and no point boring you with this kind of stuff. Funny thing is cooking helps me put what I have to deal with into perspective. I can think things through as I cook. Yesterday was such a *bitch* day! It took me 3 hours to do the payroll banking as a favour for DH - apparently the winer employees get a little testy if they don't get their pay on time - not our employees but the company DH does the payroll for. Then the grocery store was out of farmer's cheese & had only one large pk of motzarella cheese but the store was flooded with little grey haired ladies blocking every aisle while they re-capped their life stories. The aftermath of a huge fire attributed to arson on Devil's night caused a back-up of traffic due to gawkers & the detour. The site could be seen from the 4 lane road so people just stopped in both directions - no way to get around them. Trust me I needed to make that lasagne last night just to calm my mind! |

Each shelf holds a specific item e.g. top shelf holds ice cube trays, second shelf holds ready made meals, etc. Food from the large freezers is rotated to the appropriate shelf for the week. When done properly by the end of the week this freezer is relatively bare with the exception of herbs, juices, and ice cubes. I restock this freezer on Saturdays. BTW, I use the same type of check lists for dried foods, misc. foods, condiments, and dried herbs & spices. I don't need a check list for home canned goods as they are all on a rack in rows of 5 where I can monitor what I have and what I need. A note on my system: I keep at least a year's supply of food & supplies on hand at all times. We have a large family and while the kids are on their own they do help themselves to any food we have, no questions asked. We supplement a couple on a regular weekly basis. I *do not* grocery shop with the exception of dairy, juices, and veggies during the winter months. The health food store actually gets more of our money than the grocery stores do! I have a large garden and preserve a lot of those veggies. I get all the free tomatoes I want so preserve to my heart's content just about every tomato product you can imagine. We live in an area where produce is very cheap so we preserve to take advantage of that and last from season to season. We also live in a rural area which means sometimes during the winter we can't get to the stores for several days and we have to drive a distance to get groceries something I prefer *not* to do. I used to like it when we had milk delivery but they stopped delivery about 5 yrs ago. I still get my eggs delivered to the house ![]() store unless I want to experiment with a dish so only need a small amount of a certain meat. The local m&p grocery is good for this but it has just changed ownership so that may not be the case anymore after mid-Nov. Beef & pork is bought from the farmers and I have to allow time for this to be ready which is one reason. For example, when I start getting low on beef, I call the farmer then might have to wait upwards of 6 weeks before the beef is ready to go to the abbitoir and another couple of days before it is cut to my specification, then I have to go pick it up. So careful monitoring of my food stock is important. We don't have a root cellar for things like apples, squashes, and root veggies. DH rigged up an insulated closet type thing in the garage for storage of these things. It keeps any rodents out and helps get us through the winter months. Fish is either purchased in bulk from the local fishery, traded for with a neighbour, or caught by ourselves. We eat a lot of fish. Our method for food is certainly not everyone's cup of tea. I'd rather spend my time in the garden, fishing, or in the kitchen instead of in some brightly lit grocery store full of frankenfoods blaring horrid music while kids scream, mothers beg then threaten, little old ladies chat & block the ailses, etc. The grocery store is just not a pleasant experience for me. |

I've never understood Devil's Night & the vandalism thing. In the closest town arson claimed huge old buildings that years & years ago used to be a lumber yard. All that history up in flames! The fire was so intense it melted the siding on four houses across the road. In the closest small city vandalism was really bad with spray painted vehicles, broken windows, several small fires, a lot of egging and pumpkins actually being thrown at passing vehicles. I just don't get where kids & young adults get a kick out of this type of activity. It was real quiet here last night. We had all of 8 kids. There were no reports of vandalism. The major complaint seems to be lack of kids out trick or treating. |

I would think their BP & sanity would improve much if both just KF'ed me and get on with cooking. Jealousy and rudeness are not very flattering traits which ever way you look at it. FTR, I would be lucky to tip the scales at 110 lb soaking wet not that it is either of their business! A major congrats on your weight loss! That is a real accomplishment and you should be quite proud of yourself. I know you were asking S****** whether he worked out but I'll pipe in anyway. I am a naturally hyperactive person always on the go. I do yoga 3x a week and walk 2-3x a week in addition to my normal activities. |

You had only some episode of vandalism! We had for young boys in the
hospital, and all in a time: an old man ,annoyed from the crackers noise, shot with his gun and hurt them!
