Default WHAT AM I EATING ?


Once a month I make a batch of "Picnic Style".
At least, that's what my Mom used to call it.
It's a recipe that's been used in our family since the 1920's (??)
Anyone know it by any other name ?
( it's a great cold-weather comfort food )

PICNIC STYLE

Dice a 1/2 lb of bacon
Saute it with 2 > 3 diced onions.
Drain most of the bacon fat.
Add 4 > 6 diced potatoes
Add 2 cans of green beans. ( 1 wiith liquid )
Pepper liberally
Cover pan and simmer until the potatoe are tender.
Enjoy.

I'd substitute and saute some green and red bell pepper in place of the
green beans.

If you add a little flour and stir it around before adding the potatoes, and
then you add vinegar with the green beans, you get my mom's version of
German potato salad.

I've never had potato salad with green beans in it but I have had green
beans with potatoes in them.

Green beans are a "sometime" ingredient for potato salad. They're kind of
like peas in that respect. I've also added pickled green beans to potato
salad, especially if it's accompanying some form of barbecue.

Now I could get behind pickled green beans in a potato salad! Especially
beside some ribs!
