Default Proposed Soups for the Virtual Cook-in

Some of us discussed last night, using V-8 juice (tomato based vegetable
juice cocktail) for a soup cook-a-long.

I have some suggestions using V-8 vegetable juice:

Veggie-beef soup - should speak for itself but add browned cubed beef or
meatballs along with herbs such as oregano and basil to the V-8 based liquid
Vegetable soup - like minestrone; add more tomatoes, zucchini and pasta to
the V-8 liquid
Chunky vegetable soup using cubed winter squash, potatoes, turnips, spinach,
etc.
Chunky chicken vegetable soup - add some chicken, carrots, potatoes, onion,
garlic and herbs such as sage and thyme to this V-8 mixture

I'll be out of town next weekend so sorry! But just some ideas.

V-8 is also an excellent base for chili, and tomoato sauces. I know
those are not soups, but.....

I sometimes just use V-8 straight, hot, by itself as "soup". ;-d

Nonsense... we all adapt to whatever we have or prefer to use. Just
sometimes we agree on a basic premise (like a tomato base) and go from
there. It's all in fun

So when is this being scheduled for??? I just bought 6 HYOOGE catfish
heads to make a fish stock, and a tomoto based (or V-8 based) fish soup
would be very good IMHO!!!

Vegetable Beef with Barley Soup

Recipe By amsel

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups water
46 ounces tomato juice
1 pound cooked beef -- 1/2" cubes
2 cloves garlic
3 large carrots -- sliced 1/4" thick
3 tablespoons worcestershire sauce
1 teaspoon Kitchen Bouquet
1/4 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon basil
2 small bay leaves
2 cans Mexi-Corn
1 can green beans -- with liquid
1/3 cup pearl barley -- quick cooking
1/4 cup dry red wine
parmesan cheese -- for garnish

Combine water, tomato juice, beef, garlic, carrots and seasonings in a
large saucepan. Cook for 30 minutes.
Add corn, beans, and barley - cook for another 20 minutes.
Add wine - simmer for 10 minutes more.
Serve with parmesan cheese on top.

There are lots of simple soups along those lines.

1. Melt a tiny bit of butter and cook some curry powder until it no longer
tastes raw. Add V8.

2. Cook a few pieces of bacon until crisp. Remove bacon from the pan and
crumble it. Raise the heat to medium-high and when the fat is hot, add a
few bay scallops or shrimp. Cook very briefly, then add V8 and the bacon.

3. Heat V8 and about a quarter as much orange juice together. When nearly
boiling, remove from the heat and add either basil chiffonade or
finely-chopped tarragon.

I used to make the world's easiest bean soup by combining a big can of
V-8, a can of refried beans, a can of some other kind of bean (optional)
and a jar of salsa. My commune-mates LOVED the stuff.
