Some of us discussed last night, using V-8 juice (tomato based vegetable
juice cocktail) for a soup cook-a-long. I have some suggestions using V-8 vegetable juice: Veggie-beef soup - should speak for itself but add browned cubed beef or meatballs along with herbs such as oregano and basil to the V-8 based liquid Vegetable soup - like minestrone; add more tomatoes, zucchini and pasta to the V-8 liquid Chunky vegetable soup using cubed winter squash, potatoes, turnips, spinach, etc. Chunky chicken vegetable soup - add some chicken, carrots, potatoes, onion, garlic and herbs such as sage and thyme to this V-8 mixture I'll be out of town next weekend so sorry! But just some ideas. Jill |
