I wondered if they'd know. :-/ Too many meat departments don't do any
cutting anymore though I did get a guy at Sam's to cut some really thick
steaks in half for me once.

The Costco guys do cut and package from the primal pieces, so they probably
would know. I know what you mean about the no cutting places. The plastic
tubs come in with the shrink wrap across the top from a central meat
processing plant and all the guys at the store do is put the price/weight
sticker on.
