Default Today's Cooking

I'm tired from yesterday and need to do housework so today's cooking is
rather simple - beef stew cooking all day in the crock pot. This is a
hearty beef stew that includes rutabaga and parsnips along with
potatoes, carrots, corn, mushrooms.

I have a stew simmring away in the crockpot as well. Mine consists of beef
cubes, potatoes, onions, and some frozen veggies (green beans, wax beans and
carrots, I needed to use up.

Plop some dumplings on the top for 20 minutes and call it done!

Nope, sorry. Dumplings are for chicken soup only here. Homemade
sourdough bread if for beef stew Besides, I'm dropping off some for
DS and will have a bowl myself as DH isn't home until sometime late
tomorrow.

Sounds yummy. I missed it -- what was yesterday that made you tired?
Something hospital-related? I have seen you mention hospital visits, but
couldn't tell if they were for you or one of your children. I hope,
whatever the case, that things are going well for you.

I spent my morning cooking chicken and veggies for a chicken pot pie.
Biscuits on the side, plus homemade applesauce. No dessert tonight -- we've
been eating too many sweets lately!

My slow-cooker is full of french lentils, curry powder, garam masala,
cumin, olive oil... I'll taste it in a while and decide what to do with
it from here. I've been cleaning all day, so I didn't want to deal with
a lot of cooking for lunch/dinner.

Too bad... dumplings are a staple in stew in the British isles. And where
my German grandmother was raised in Pennsylvania, rivels/rivlettes (small
egg dumplings but not rolled out like noodles) are well known in potato
soups and corn stews. You are missing out

I made a beef stew this afternoon, but it is for dinner tomorrow. I think
that stew tastes a heck of a lot better the next day. I always brown the
beef, take it out and then sweat onion, carrots, celery, mushrooms and
garlic, then add wine and broth and thicken the sauce with Veloutine. Then
I toss the meat back in and simmer it for an hour or two. The next day I
heat it up, toss in potatoes and carrot and stick it in the oven. About 10
minutes before serving I toss in some corn and peas.

DS has been in the hospital for a little over 3 weeks. Yesterday
involved taking DS to a larger hospital for admission and staying with
him to get him settled. We are able to bring him home on the weekends
which helps his moral quite a bit. It does mean a lot of time on the
road for both DH and myself. It also means more cooking for ready to
eat meals for him when he's home. On top of that, I have a couple of my
own health issues. I got through the MRI ok and have an appointment
next week to discuss the results and the next steps with my doctor.
Lots of fun but you know things could always be worse.
