Chewy Chocolate Chip Cookies and Alton Brown
Hi, I Tivoed Alton Brown's Cookie episode a while back and just tried
his recipe for chewy chocolate chip cookies. I did everything exactly like he said. I promise. I did it as the tape rolled and have watched it several times before and took notes also. The cookies turned out cakey, more like bread than cookies. They tasted good, but they were not chewy at all. 2 sticks melted butter (unsalted) 2 1/4 Bread flour 1 tsp kosher salt 1 tsp soda 1/4 white sugar 1 1/4 dark brown sugar 1 whole egg 1 egg yolk 2 tbsp milk 1 1/2 tsp vanilla two cups semi-sweet chocolate chips chilled, used #20 disher and 375 13 - 15 minutes I did all this and exactly like he said. cakey. I did some research and saw most everyone used All Purpose Flower for chewy. Any hints on how to make the cookies chewy? Thanks. |

I find that if I cream the sugar and butter to long I will end up w/ cake
