Default Good meal and a fun day...

Well, it was an interesting Thanksgiving. I got home last night from my
mom's house, where I visited for 5 days following her back surgery (she's
doing much better now, but her meds made her nauseous for a full week).
Found out that my husband had bought a turkey breast and some veggies,
wanting a quiet Thanksgiving day at home instead of going to his brother's
house.

We were pretty well supplied, but we kept it simple: just the roast turkey
breast, James Beard's stuffing (mmm.....butter!), green beans, pan-browned
brussels sprouts, homemade applesauce, and apple pie with fresh whipped
cream.

So this was not a tricky meal to cook, but the challenge was getting it all
made considering that we weren't home half the day. We (hubby, 3 kids, me)
walked up to a nearby school to play a morning game of kickball with some
other neighborhood families. After that, I snuck home and cooked for a
while (made the pie and applesauce, and prepped the stuffing). Then we went
to a neighbor's house to bounce on their trampoline for a while. Came home,
dumped exhausted toddler into crib for a nap, resumed cooking.

At dinner, my husband turned to me and said happily, "This is the best
Thanksgiving dinner I've ever had." He really liked the stuffing, Carol -
thanks! And he ate two pieces of pie, ugly crust and all.
