It, a mistery! I don't find my post with google!
BTW here is the recipe.
If you want, after having fried eggplant slices, put in a colander for a
night or a plain afternoon (every layer separated with absorbent paper) to
drain oil.

Parmigiana di melanzane

Category: Pie entrees
Nb persons: 6


2 kg Eggpalnts
750 ml Tomato sauce
2 medium Onions
Salt
Pepper
250 gr Mozzarella
150 gr Reggiano cheese
50 gr Bread crumb
10-15 leaves Basil
1 tsp oregano
EVOO
Seeds oil

Cut the eggplants in slices of about 6 mm of thickness. Put them in
colander with few salt on every layer to avoid the leakage of bitter water.
This operation will take about 2-3 hours.
Dry eggplants with cooking paper and fry them in a large frying pan with
enough seeds oil.
When fried, put them over an absorbent paper.
Prepare the tomato sauce with 4-5 spoons of EVOO , chopped onions, canned
tomatoes (chopped), 4 leaves of basil (minched), 1 teaspoon of oregano, salt
and pepper. Cook for about 15 minutes.
Take a croasting pan. Put inside a thin layer of tomato sauce. Then put over
the fried slices of eggplant. Over this put (see the photo), some spoons of
tomato sauce, some spoons of Reggiano, some leaves of basil, some pieces of
mozzarella.
Go on like this with other layers. End with slices of eggplants, some tomato
sauce, reggiano and breadcrumb (not mozzarella).
Put in hot oven at 180° till Parmigiana come crispy.

Ohhhhhhhhhhhhhhhhhhhhhh" Surely that yes! I love MUCH MORE cold parmigiana
than hot parmigiana. Once upon a time I have had many guests in my house so
I had to made 3 kg of eggplants . But some of the invited guests didn't
arrive, so I had to put my parmigiana in the fridge and I had to eat it for
a whole week! WELL: parmigiana was better the day after and after a week it
was better than the first day!!!!

Another thing: for heating parmigiana you can put it in the microwave oven
for just 2 minute, or in the normal oven. But one thing is sure! You taste
the very parmigiana taste when it is not very hot but luke worm!!!!!!

That's very funny Pandora :-) :-)
I'll let you know how it turns out. We're having a creamy smoked salmon
terrine first followed by the famous parmigiana, of course. Thought I''d
serve some roasted peppers with garlic onion and herbs on the side, along
with the schizel. We're following up with something chocolate, on account of
some of my guest don't really think they've had a real meal unless they have
chocolate to finish!

Oh! Your guests are insatiable!!!!! For me a Parmigiana would replace a
whole meal!!!!! DDD

I just typed Parmigiana di Melanzane - Pandora into Google and it came up
right away. Your boyfriend is correct - you had typed Mealzane in the
title, but the recipe came up anyway.

I just found Kate B's post. Type in: Successful Melanzane alla
Parmigiana - A Report, dated August 24, 2005.

This converts Pandora's measurements into US ones and takes people through
the steps Kate took to make Pandora's dish, which she said was absolutely
delicious.

Here are the steps I took:

Go to Google
Click on Groups
Type in: rec.food.cooking
Type in: Parmigiana di Melanzane - Pandora

It should come up. If it doesn't, Pandora, then I don't know what the
problem is. Good luck.
