Here is photos and recipe of a odd red chicory risotto! "Odd" because I have
invented this morning and we liked it very much! I hope you will enjoy it, too! Cheers Pandora Photo: I have put in the oil : onion and red chicory http://img207.imageshack.us/my.php?i...ict00703sq.jpg Red chicory and onion are whitered: http://img207.imageshack.us/my.php?i...ict00712wz.jpg I have add rice and after some minutes wine: http://img207.imageshack.us/my.php?i...ict00727px.jpg I have add truffle sauce, butter and chive : http://img375.imageshack.us/my.php?i...ict00776tc.jpg I have add reggiano cheese, butter and chive http://img451.imageshack.us/my.php?i...ict00784xv.jpg With a good red wine... http://img451.imageshack.us/my.php?i...ict00745px.jpg Red chicory risotto Category: First dish Nb persons: 2 2/3 cup olive oil - EVOO 1 medium onion - chopped 300gr rice - (I have used whole rice, but you can -use all the kind of rice that you prefer) 6 cups lukeworm mushrooms broth - (I have used cubes -of porcini's broth, but you can also use meat -broth cubes) 1 cup red wine - (the same that you will drink at -table) 1 tsp salt 1tsp pepper 1tsp Toscana's herbs - dried (if you don't have -put some mix of dried herbs) 1tsp provence's herbs - dried ( " ) 1/2 cup reggiano cheese 2 tsp truffle butter - (if you don't have put -normal butter) 1/4 cup ready white truffle sauce - (if you don't -have it put some fontina cheese softened with -milk) 1/3 cup chive - (if you don't have put some fresh -thime leaves or parsley leaves) Worm water and add the mushrooms cube broth. In a large "risottiera" or a cast iron frying pan for risotto, put oil, chopped onions and chopped red chicory, then add a pinch of salt and pepper. When red chicory is whitered, add rice and mix for other 5 minutes .. Then evaporate rice with red wine. When all the wine is absorbed, continue to mix the rice adding the broth (one at a time) and the herbs. It will take about 20 minutes for the rice to be ready). When rice is ready , turn off the fire and add :truffle sauce, truffle butter, reggiano cheese and chive for garnishing. Serve!
