Thought I'd share.
I A traditional Dutch winter dish is stamppot. it is always a combination of mashed potatoes with one or two vegetables mixed into it. Typically served with fried speck and sausage. The most classic veg that are added are kale, or sauerkraut, or apples (ok, a fruit) or a mixture of onions and carrots. Today, I made a version of a leftover mash of potatoes and celeriac root (70-30 ratio, total weight about 600 grams). I added 500 g of sauerkraut (rinsed and then cooked for about 10 minutes), a sauteed onion. Served it with slices of fried bacon on top. It tasted much better than I had hoped. The mild sweetness of the celeriac perfectly balanced the sauerkraut. I had considered adding dates and/or peppadews, but since it tasted so good, I left the stamppot as it was. |
