Default Dinner tonight fast and simple

Made the Chinese Simmered Chicken recipe I got off the Foster Farms whole
chicken wrapper back in 1987. Funny thing is I think the same recipe is on
the chicken these days. I make mine with cut up chicken so much better.
Always have to make it with the green onions and toasted sesame seeds or
it's just isn't as good.

Chinese Simmered Chicken
Steamed rice made with chicken broth
and steamed broccoli

With all the holiday things going on, the end of school approaching for the
year and kids sports I just want to eat at home and eat good.

please post this recipe just the way you make it with cut up chix,
scallions and toasted seeds?

Here you go. Enjoy!

Simmered Chinese Chicken

1 (4 lb) whole chicken, or about 4 pounds of cut up chicken.
1 tablespoon vegetable oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water
1 tablespoon catsup
1/4 cup dry sherry or apple juice
1/2 to 3/4 teaspoon crushed red pepper flakes
1 clove garlic (pressed)
1 green onion (sliced)
2 tablespoons cornstarch
1 tablespoon water
2 tsp toated sesame seeds

Heat the oil in a large dutch oven or soup pan. Brown the chicken on all
sides.

Mix together soy sauce, brown sugar, 1/2 c water, catsup, sherry, red
pepper, garlic and green onion.

Pour mixture over chicken. Cover and simmer approximately 35-45 minutes.

Remove the chicken to a serving platter. Draining juices back into pan.
Skim the fat from sauce.

Blend together cornstarch in 1 T of water. Stir into sauce cook stirring
constantly, until thickened. Spoon some sauce over chicken, sprinkle with
sesame seeds. Serve with remaining sauce.

* Sesame seeds need to be toasted to develop their nutlike flavor. Toast
sesame sees in shallow pan at 350 degree F oven for 10 minutes, stirring
frequently.
