My Favorite Son arrived late this afternoon and we stopped at Brianno's
for pizza on our way home. While there, waiting for our pizzas, I eyed and tasted some capicolla and genoa salame. Took a half pound of each, 3/4 # of sausage, a half pint of artichoke salad, 1/2 pint of their delicious basil vinaigrette, and a loaf of their bread. Oink, oink, While snarfing the pizzas, we discussed tomorrow's plans: Chris and I will depart for the Mallof America at O-dark-thirty to be there when the Apple Store and Legoland open. It's time for the munchkin to graduate to real Legos, says Uncle Chris. While we're gone Rob will make his red cabbage. We'll get home and at some point during the day do the tourtiere/s. Not for tomorrow's supper; I've been informed that I'm making spaghetti with that sausage I bought. Fine. After supper the guys bonded in front of the tv set and I made fudge and caramels. It's possible that these caramels will be a challenge to dental cement. I may have overcooked them a titch. It's an old recipe: sugar, corn syrup, whipping cream, butter. The fudge is a sugar syrup (evap milk and sugar) poured over butter,chocolate chips, vanilla, and my secret ingredient. Three smallish foil pans for gift giving tomorrow. I've cut three rows of caramels (a small bag for the guys at the Apple store) and Chris is up so I can go downstairs to find my caramel wrapping papers. Here you go: _____ * Exported from MasterCook Mac * Fudge - Mavis Kent's recipe Recipe By : posted to r.f.cooking by Barb Schaller 12-24-05 Serving Size : 100 Preparation Time :0:00 Categories : Candy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 1/2 cups sugar 2 small cans evaporated milk (1-1/4 cups) 2 sticks margarine (1 cup) 2 cups milk chocolate chips -- (12 oz.) 1 cup semisweet chocolate chips -- (6 oz.) Nuts -- to your liking 1 tsp. vanilla About 2-3oz. cream cheese (the secret ingredient that's not part of the original recipe) Boil sugar and milk for 10-12 minutes on medium and stir. Use 3-qt. sauce pan. Maybe 10 minutes, per Sandy. In a bowl, combine the rest of ingredients , pour sugar/milk mixture over and stir until melted (Sandy does this in her mixer!!). Stirring, bring to a rolling boil and slowly add the remaining CUP of cream, stirring so the boil doesn't break. Cook to 246° for a firm caramel, a little less for a softer one. My 2005 batch may challenge dental cement. Nope - I just ate a small piece and it's chewy but do-able. Pour into a buttered 9" square pan, cool, cut and wrap. It took about 20 minutes to get to temp after adding the cream. Cut and wrap in taffy wrap. Makes about 75 pieces from a 6x10" pan. Can also (I've done it, but not this year -- it was late last night) put a mess of pecan pieces on a baking sheet and drop globs of caramel on top. Remove the cooled caramel/nut globs and dip in chocolate or put some chocolate on top to make turtle-like treats. If you want to make it difficult, arrange pecan halves neatly and neatly drop the caramel in the center to hold them together. We were there at 7:30 and no coffee shops were open. :-( I spent an hour in the Apple store and they WERE NOT BUSY! Yesterday was fierce, though, and their corporate-wide credit card whatsits system went down. With 40 customers lined up to purchase. The Lego store is right near the Apple store and Chris went looking for Legos (the small size - "it's time for her to graduate, Mom") and they were out of all but kits. We bought the last bigass tub of legos at ToysRUs. Ran into my grandniece there - she was on her way home from UW-Madison; had a nice visit with her. Came home at 10:30 after doing more groceries. I had a 2-hour nap from 12:00-2:00 and am now making the spaghetti sauce for supper, and will then work on Grinding The Pigmeat for the tourtiere. Only have to make one this year, I think. Lucky me!
