Default REC: Stuffed Portabello mushroom caps

Stuffed Portabello caps:

9 medium portabello mushrooms

2 stalks celery (optional)
1 oz. fresh basil leaves
1/4 oz. fresh thyme
2 small roma tomatoes
1 cup shredded jack cheese (or cheese of choice)
1 lb. lean ground beef (I used 96/4)
1 tbs. grated fresh Ginger root
1 medium shallot
1 pinch black pepper
2 tbs. toasted sesame seeds
4 oz. baby spinach leaves
1/4 cup EV Olive Oil


Remove stems from the caps, remove dirty end then chop the stems and put
them into a bowl. Take the caps and oil the outside with additional
Olive or Grapeseed oil and place on to plates.

Chop all other ingredients and add to chopped portabello stems.

Mix well and stuff into oiled caps.

Grill on Electric grill for 10 minutes.

Serve with a light spray of Soy Sauce and salt to taste.

I don't entirely know how to explain it... I love mushrooms... all
sorts and in a variety of ways.... but portabello mushrooms just give
me the heebiejeebies..... My body finds it hard to even swallow
them.
The only thing I can attribute it to, is that they so much remind me
of the mushrooms I used to eat and make into tea. And those always
were difficult to get past the throat. I so honestly want to like
them... but ewwwwagaaaahhhhh... gag reflex kicks in big time.

Cow patty mushrooms smell similar if I remember correctly.
'tis been awhile!

I knew one dude that powdered them and loaded them into gell caps to get
past that problem. He could not stomach the taste either!

ROFL.... well I got past the gag reflex... due to the point of why I
was ingesting them. My old crew's favorite way was to brew it up...
and mix it with highly sugared Cool Aid.
With the portabellos... there is no point to get past the reflex...

Well, I guess Ill just have to try that.... may be a little while
till I get the gumption up for it, but Ill not run away from the
