Default Help with beans?

I soaked some beans overnight on the counter, but didn't use enough
water, I guess, and I forgot about them till just now when I came home
from work. they split open and smell "sprouty", but not spoiled they
will still be safe to eat, right?

Yes. If you lived in a very warm climate, and you were serving them raw,
like in a 3-bean salad, you might want to start over. But, if you're cooking
them, you'll be fine.
