...do you use in your cooking?
I have some fifty, here is my collection:

My favourite a Curry, mix of peppers (black, pink, white, green); mix of
spices for cous cous; tuscany herbs, provence herbs, mexican mix of hot
chili peppers, curcuma and mushrooms and herbs powder.

I just counted 31. But I don't use half of them very often at all.
I use whole peppercorns, basil, oregano, cumin, thyme, rosemary and
paprika the most.

I never counted. Wait just a minute.....

Crap, I lost count, but I estimate my total to be about 50, too.

I keep them in clusters approximately arranged by ethnic/national
cuisines. I.e., Euro-herbs like thyme, bay, dill, etc. are in one
group; Spanish/Mexican spices like smoked hot paprika, cumin, Mexican
oregano, dried chiles, etc. are in another; and Indian/Asian blends
and spices like ginger, garam masala, curry powders, etc. are in a
third. Then there are the various odd ones like a tin of powdered
wasabi and a big pack of herbs de Provence that get clustered in
another place because they physically don't fit the appropriate
shelves.

Not to mention the frozen flavorings like several packs of basil I
have in the freezer.

No. Peppercorns are what you grind to get ground pepper :-)

Are we talking spices, herbs, combinations, variations of the same thing, bottle
sauces etc.?
I counted close to 50 jars and bottles, but there were some duplicates, like
four different types of curry powders, allspice and ground allspice, ground
cinnamon, cinnamon sticks and cinnamon sugar, fresh mushroom, canned mushrooms
and Chinese dried mushrooms, chicken, beef and vegetable stock cubes and cans
and boxes of broths. Then there are the various oils, vinegar, red wine
vinegar, white vinegar, brining vinegar, rice wine vinegar, balsamic vinegar
etc. Then there are the hot sauces, at least a dozen of those. Mustard.... dry
powdered, hot mustard, Dijon, prepared etc. Soy Sauce, light soy sauce,
Teriyaki.....

My favorite spice (actually it is a mixture of spices) is Old Bay
Seasoning. Since I've given up red meat I use it all the time with

Oh Yes Shijtake mushrooms. I don't find them very tasty: prefer pocii

I have (and throw out to replace each year or two) over 50 bottles,
bags or containers of spices and seasonings, plus I grow several like
parsley, rosemary, basil, sage, thyme, scallions, etc.. Among the
dried spices/seasonings, I use most the various peppercorns, garlic,
flavored peppers, citrus peels, Penzeys Bavarian and Italian blends,
garlic, toasted onion bits and baking spices/extracts most often. What
a difference for just the right, more exotic flavor seasonings and
spices can make in otherwise ordinary cooking!

herb carosel hold another 20 jars of herbs and spices. Then I have
about 20 larger bulk containers or spices/herbs/blends that I use a lot
of. Like you I have a wide variety of oils, vinegars, broths, sauces,
mustards, and salts. Then I have things like liquid smoke, wasabi, hot
sauces, wines, sherries, brandy and rum - all used to enhance different
dishes. It would take forever to list everything! I think the more you
cook, the more you fine tune your cooking, and increase the types of
dishes you make, there is a tendency to have a wider variety of herbs,
spices, flavourants, etc. There is also a tendency to make your own
herb or spice blends.

Really it isn't all that impressive at least to me. To me it is more
about knowing what herbs, spices, or flavourants to use when and being
able to use them properly instead of the amount you have. I have a lot
but then I use a lot.

It depends Pandora. Both rum & brandy are great additions for jams,
jellies, and deserts. I use rum & brandy mainly for that reason.
Brandied cherries and peaches are really nice as is rehydrating raisens
in brandy for some dishes but brandy especially cherry brandy - or
cherry whiskey which I prefer - is really a nice flavourant for icings
and whipped cream. I use rum for rumtopf and Christmas puddings as well
as eggnog. I kind of go with the theory of when I make something and
the idea pops into my head that rum or brandy would work with this, I
try it to see what happens.

Oh, heavens no! I'm certainly not gourmet and don't want to be but I do
like to cook with good ingredients. Sometimes for this to happen you
must grow your own or blend your own mixes or make your own sauces so I
have a lot of this type of thing.

I use only for salted things

Ohhhh! Yesss! A friend of mine usedto rehydrate apricots with brandy! They
were Wonderful like this. Once upon a time I have tried to make them and I
put them in a pot under brandy! Then I forgot them and I ate them after an
year. They were gooder!

I just counted over 100, but it might be more like 90, since I do have
some jars of whole and others of ground of the same spice or herb. I
did also count a few mixtures, and just ran out of curry powder
tonight....

How many I use on a regular basis? 30 or so.
Savory: onion powder, garlic powder, black pepper, white pepper, mixed
4-color pepper, paprika, sweet paprika, cayenne, hot pepper flakes,
basil, oregano, thyme, bay leaves, parsley, marjoram, dill

"Sweet": cinnamon, ginger, nutmeg, allspice, anise, fennel, star
anise, mace, cardamom and cloves. Also Vanilla, orange, anise, and
almond extracts.

damn, I knew I should have ordered more drawers when I had this kitchen made
(6 yrs ago)...much better for keeping jars/pkts etc of stuff and more
visible, rather than losing stuff to the back of the cupboard

When I bought my house many years ago I ripped out and rearranged the kitchen
before I moved in. My father in law crafted a cabinet to go next to the stove.
It had a very wide, deep drawer that I could put my spices in. The bottom part
was a tip out trash/recycling cabinet. I loved that thing

Yes It's very nice! As I told you the post before, I like very much those
round inox boxes with other boxes inside! Have you bought them just for this
purpose?

Thank you for the enthusiastic reply. This was my first post since
October since I don't/can't read this group from Halloween to New
Years because it becomes too highly traphic. Even if it means missing
Bob T mess with micro-encephalon boy.

yeah, i got one from a catalog years ago and when it arrived the top was all
scratched up so I called them and asked if I could return it for a replacement
and they sent the replacement and told me to keep the scratched one. So I kept
it and used it. the only issues I have with them is that I have to keep the
spices that I use frequently in there as they are exposed to the air and if
they get knocked around they will actually get mixed up in the cups. I spent
weeks picking cardamom seeds out of my cinnamon.
