Walnut and blue cheese pasta for 1
1/2 yellow onion, sliced 1 tablespoon butter 1 tablespoon olive oil 1/4 cup walnuts 1" x 2 " chunk of blue cheese, diced or crumbled fresh thyme whole wheat penne, about 3/4 to 1 cup dry Put pasta on to boil. Carmelize the onion in the butter and oil. About 1/2 way through, add the walnuts and toss, letting onion continue to slowly cook as walnuts toast. When onions are golden and wilted and walnuts are getting crisp, add the thyme and blue cheese and mix well. Add the cooked pasta to the pan and toss well. Add salt and black pepper to taste. Drink: vodka from the freezer in a wee frosty glass, with a pearl onion marinated in orange juice and red wine vinegar. Hey! |
