Hi,
I usually go down to New Orleans this time of year, but unfortunatly because of Katrina, I'm going to give the area some time to rebuild. Anyway, I've got a craving for Louisiana cooking and found a great recipe for Jambaylaya on Louisiana's own Holly Clegg's website. I like Jambalaya, it's one of those good dishes for some leftover turkey or whatnot. I made some recently with turkey breast I cooked out on the Weber Smokey Mountain. I must shamefully confess that I use regular old smoked sausage rather than springing for andouille.
