Those Oatmeal Breakfast Cookies
 
I've always eaten these things as one big patty. Unfortunately, if I
eat that many carbs for breakfast, my blood glucose levels soar. (I'm
diabetic)

So, I've been frying it into four smaller cookies. I can eat those
later in the day, when they don't affect my BG very much. And South
Beach *requires* you to have dessert after lunch and dinner. Not bad,
huh?

In case anyone's interested, and missed the original post, here it is:

1/3 cup oatmeal (not instant) I'll use Old Fashioned next time
1 egg
cinnamon to taste
vanilla to taste
sugar or artificial sweetener to taste
finely chopped apples (optional)
raisins (optional)

Fry in the shape of a patty in a lightly buttered skillet until firm.

Did anyone try this when I posted it before? Did you like it?

I tried it, Carol. I goofed up somehow....what did I forget? Oh yeah, the
sugar. Anyhow, as I was mixing up the batter, my 2-year-old toddled into
the kitchen and said, "Mommy, I have some pancakes please?" So I gave him
some of the oatmeal cookie thing. It was ok w/ syrup on it, though I would
have preferred it made properly w/ sugar. He liked it, though, which is
great! Eggs and oats. I'll make it again sometime, I'm sure.

LOL! Yeah, sugar would have been nice. I'm glad my little boyfriend
enjoyed his pancake. I've posted this recipe before, but as an
oatmeal pancake. No reaction. Changed it to a cookie, and the crowd
went wild. Same recipe.

Personally, I love brown sugar with my oatmeal. I have a bottle of
DaVinci's sugar free French Vanilla coffee syrup. Tastes more like
brown sugar to me than vanilla. So I've been using that instead of
the Splenda and vanilla.

I'm enjoying my four cookie-sized cookies quite a bit.

Hi

I love oatmeal, but if I haven't eat any for a while and say I buy a
big quaker barrel of it..?

about 2 bowls later, I get the worse headache...
i keep eating the oatmeal morning after morning..the headaches stop

I think oatmeal must have an agressive blody cleansing agent, and my
headaches (without fail)...are toxins?

I know that it's a good source of fiber. Keeps ya regular, and is
reputed to lower cholesterol.

The headache part, I don't know. We have some scientist-types on
board. Maybe one of them can answer the headache question for you.

Well, I sort of tried it -- with just leftover oatmeal and an egg because I

I am wondering if this will work with leftover oatmeal made with steel
cut oats?

I too am trying to watch what I put in my body lately... Not quite
South Beach, but close.
