So, what's a good way to prepare a couple of skatewing filets?

Thanks for all the suggestions.
I ended up pan-frying the skatewings in butter and olive oil, and serving them with a homemade tartar sauce - fairly simple, just to get a feel for how to do it next time. The fish was delightful.
