I simply cut into manageable pieces, shake then in a bag with seasoned flour
(whatever you like, I usually stick with sea salt, white pepper and
sometimes a little chilli powder or lemon pepper), then shallow fry in a mix
of butter and oil (usually canola oil)

simple and doesn't overpower skate's wonderful flavour

Pan-fried in browned butter with shallots, is my favorite.

Default Skate wings

Thanks for all the suggestions.

I ended up pan-frying the skatewings in butter and olive oil,
and serving them with a homemade tartar sauce - fairly simple,
just to get a feel for how to do it next time.

The fish was delightful. I'm thinking of a homemade wasabi
mayonaisse next time.
