Went on a little field trip to a local buffalo ranch and picked up:
ground buffalo buffalo stew meat buffalo cube steak buffalo flank steak buffalo chorizo and 1 package of ground yak meat. Really. The cube steak was a whim, as was the yak. I've bought their ground meat and stew before and it's really good, but very, very lean; you need to add some fat to cook it. I'm still not sure what I'm going to have for dinner tomorrow. I was thinking some sort of pasta. Maybe I'll use a pack of the ground meat for some sauce. -- Donna |

I actually like it better than beef, although it's pretty pricey. Never had Yak - what does it taste like? -L. |

A yak is a domesticated wild cow so it figures. Since they don't feed them grain and the yak has to hustle to forage it's about as lean as buffalo is. George |

I like buffalo for ground meat, stewing meat, and anything that cooks long and slow. But since it's so lean, I'm not that crazy about the steaks. When I consider the price, I try to weigh in the fact that I'm not draining off fat when I cook it, so the ground meat is actually a decent price. |
