Dad has a fondness for blackened fish, and I noticed a small cardboard container of "cajun blackened fish spice" sitting on the sideboard the other day. <G> Since I do all the cooking, I'm taking that as a hint! I have some older, less valuable cast iron stashed out back in the storage cabinets, I suppose I could dedicate one of the cheapo Lodge pans to be used outdoors on the grill and give it a shot. I'd _never_ abuse mom's beloved Griswolds like that! I'd experiment with something cheap like Catfish first. That pic looks tasty! -- Peace, Om. We have a gas grill but you can super heat the cast iron with the Coleman and have better control..you need a white ash hot skillet.. cast iron is tough stuff, don't think you can hurt it. Wood fires get EVER so hot! I know that mom used her Griswold over campfires, but, well, mom is no longer with us. I'd rather play it safe and I do have some cheaper cast iron that's not being used.
