Default Blackened Redfish Photo



We burned this tonight. Photos are outside..serious smoke. The dish was
way better than the photo.

I'm going to have to google for the technique...

Dad has a fondness for blackened fish, and I noticed a small cardboard
container of "cajun blackened fish spice" sitting on the sideboard the
other day. <G>

Since I do all the cooking, I'm taking that as a hint!

I have some older, less valuable cast iron stashed out back in the
storage cabinets, I suppose I could dedicate one of the cheapo Lodge
pans to be used outdoors on the grill and give it a shot. I'd _never_
abuse mom's beloved Griswolds like that!

I'd experiment with something cheap like Catfish first.

They look way good! You don't get blackened anything without smoke.

I make a rendition of the Paul Prudhomme recipe..If you don't find what
you want..will be glad to post.

I use a Coleman stove. We have a gas grill but you can super heat the
cast iron with the Coleman and have better control..you need a white ash
hot skillet.. cast iron is tough stuff, don't think you can hurt it. I
think they actually like to be used for this dish. <g>

It is a crowd pleaser..but don't try it inside...fire department will come.

I've not googled yet, that's a weekend type project and I slept most of
this past weekend, I was coming down with a cold. :-P

Hmmmmm... I have a Coleman in the shed, but I'd have to pick up a tank
for it. Would a good hot wood fire work ok??? Wood fires get EVER so hot!

I know that mom used her Griswold over campfires, but, well, mom is no
longer with us. I'd rather play it safe and I do have some cheaper cast
iron that's not being used. I'd just need to clean the rust off and
using it over the campfire would do a good job of seasoning it. <G>

I DO have a nice salmon fillet in the freezer, but good catfish fillet
is 1/2 the price and we both like it.

Thanks for posting the idea!
He gripes sometimes if I don't cook enough "variety". <lol>
I don't mined it gives me license to experiment, and that's
what makes cooking fun!
