Default Lump of Pasta?

I just watched an Avventura episode where the restaurant chappy made pasta
dough and whacked it into a bit of cloth then boiled it.

After an hour or so, it gets unravelled from the cloth and cut up into
cubes.

I must admit that while I make pasta a lot, I always use my winding machine
and I have never even thought of the boiling thing. (Which, of course, is
what you do after you've made pasta)

Does anyone know what I would google to find out more about this method?
